cucumber liquid

This is the time of year when cucumbers are in season. My grandmothers always grew cucumbers. They would each make a version of this dish. This is one of my favorite ways to eat cucumbers from the garden.


Cucumber liquid

Fill a quart jar 2/3-3/4 full of sugar
add the spices
1 teaspoon garlic salt
1 teaspoon paprika
1 1/2 cups vinegar
1/2 cup water
Shake until sugar disolves

Slice a few cucumbers and an onion.
Pour the liquid over the sliced vegetables.
let sit at least 45 minutes. Serve at room temperature.
Can be served as an appetizer, salad, or as a relish on the side.
